  • 3 Roma tomatoes , diced
  • 2 avocados , diced (optional)
  • 1 recipe cilantro lime ranch , recipe follows
  • Sour cream , for serving (optional)
  • 1 cup frozen corn kernels
  • Cilantro Lime Ranch
  • 1/4 cup + 2 Tbsp mayonnaise
  • 1 small clove garlic
  • 1 Tbsp buttermilk ranch seasoning mix
  • Juice of 1/2 - 1 lime
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/4 cup cilantro (about a small handful)
