- 2 Tbsp minced fresh parsley
- 1 Tbsp olive oil
- 1 small yellow onion, chopped (1 cup)
- 3 cloves garlic, minced (1 Tbsp)
- 1 1/4 lbs lean ground beef
- Salt and freshly ground black pepper
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup tomato sauce
- 1/4 cup chicken broth
- 1 1/4 cups brown rice or white rice,* cooked according to package instructions
INTRUCTIONS
- heat olive oil in a deep 12-inch non-stick skillet or a pot over medium-excessive heat.
